• 6 flour tortillas or Azteca Wraps
• 500g chorizo sausage
• ¼ cup sliced onion

• 12 eggs
• 2 tbsp chopped red pepper
• 2 tbsp milk
• 1 tbsp grated cheddar

HOW TO PREPARE: (Suggested quantities for 6 tacos):

Take the tortillas out of the fridge and put them aside

Brown the chorizo in a large frying pan. Add the onion and red pepper. Cook at a medium heat for 5 minutes. Drain the chorizo mixture. Beat the eggs with the milk. Add the eggs to the chorizo sausage mixture and stir until the eggs are cooked (about 3 minutes).

To serve, distribute the mixture between the tortillas. Cover them with the grated cheese. Fold or roll the tortilla. Serve immediately
